This week's Dorie recipe is a total winner! We had this for our Sunday dinner with the whole crew, so I had to cook two chickens. Let's just say, I should have cooked three! Everyone loved the flavor of the chicken and the vegetables (personally, I think the onions and carrots for absolutely amazing!) I didn't get any great pictures as I was rushing a bit to get dinner on the table. The chickens took a little longer since I put two in my giant le creuset pot. Oh well, they were so worth the wait. I used brandy instead of Armagnac as I am on a food budget and trying to use things I already have instead of buying new single use ingredients. Tasted amazing...don't think it made too much of a difference. I also served stuffing from Thanksgiving (we had so much left, I froze a bunch...oh my gosh...it was so much better than on Thanksgiving...our new secret is going to be to make it a month ahead of time & freeze it.) I also made my wonderful no-knead bread. Every one's happy when I put a loaf of this fabulous bread on the table. All in all, it was a really terrific dinner.

Two chicken in the same pot! I cant' begin to imagine the size of your Le Creuset! I can barely fit one into my 5 1/2qt! So glad it was a hit at your house.
We loved this dish, and I am surprised by those who didn't. Good call on making an extra chicken; I wanted more left overs!
Adored this! Great idea to do two chickens at once. I think this is my new go to menu instead of delivery because it was so easy!

Everything looks wonderful. I like the thought of the
leftover stuffing, good idea. Tricia and I had different
takes on this one, but Hubby was happy, so that is good.
What a great meal! Your family must have been so happy. I love your idea of freezing the stuffing - less hassle on Thanksgiving day! I wonder what else could that work for.

I am revisiting that I was in a grouchy mood over spending $13 on a small chicken, rushing, and disappointed when I didn't see "crispy" skin :) Even Hubby reminded me the next day that the chicken was very moist. I think I will revisit this with 2 next time, and get them from Costco :) And great job on freezing the stuffing...which I had thought of that !!!

You must have a giant and heavy pot! I can barely lift mine:) We loved this too and stuffing would be an excellent addition. I'm also on a food budget and went with brandy. One of these days I'd like to try it with Armagnac though.

I have a 9.5 qt oval dutch oven that fits 2 chickies perfectly. I love it for things like that. (But its sooooo heavy)
